Southern Rotisserie Chicken Salad
This chicken salad is the perfect blend of smokey, savory and sweet. Great on a sandwich or even with a spoon!

ingredients
1 rotisserie chicken
1 medium or large red onion
2 apples
a handful of fresh chopped parsley (however much you see fit)
about 3/4 cup mayo
about 1/2 cup of honey mustard
about 2 tsp liquid smoke
salt and pepper to taste
DIRECTIONS
This is an intuitive recipe! Make this chicken salad as “wet or dry” as you like . This is an estimate, as I don’t really measure. Just feel the vibes.
In a large bowl, shred the rotisserie chicken. Making sure to set the skin aside. I don’t like the skin in the salad, but if you do, do you!
Chop up the onion, apples, and parsley and add to the bowl.
Add the mayo, honey mustard, liquid smoke, and salt and pepper, keeping your own desired texture in mind. Add less wet ingredients if you like a drier chicken salad, add more wet ingredients if you like a more wet chicken salad. Mix thoroughly.
Once the salad is to your liking, cover and chill in the fridge until ready to serve. Enjoy!
